Mini breakfast stratas truly are the best way to start the day. However, it takes time to make such a breakfast each morning and honestly with the hectic lives we are all running it make sense that this is the one meal that is the most rushed in the day.
Getting enough protein, carbs, and fat to keep you satiated during the morning hours can help you increase your productivity at work and at school. Truly, when the old saying says “breakfast is the most important meal of the day” they weren’t joking around.
Portion control is something that many in the Western world have a difficult time understanding. Keeping things under moderation and within certain bounds can help you lose weight. If you know you are eating too much the best way to start to lose weight is to lower your daily portions.
These mini breakfast stratas are the ideal way to start your day. Not only are they the perfect size, and are portion controlled automatically, but they contain a lot of protein, carbs, and fats that should keep anyone with a normal appetite happy for many hours to come.
Ingredients for mini breakfast stratas
- 5 large eggs
- 1 1/3 cups milk or half & half
- 1/2 teaspoon prepared mustard
- 1/8 teaspoon paprika (sweet or smoked)
- A pinch of cayenne
- A dash of nutmeg
- 1/4 – 1/2 teaspoon salt
- 5 slices day-old bread, cubed (about 2 cups)
- (Optional) 4 ounces cooked smoked ham, cubed (about 1 cup) or 5 slices cooked bacon, drained and coarsely chopped
- 1 cup cooked and very well drained mushrooms, spinach, Swiss chard, potatoes, or other vegetables (double the amount of vegetables and dispense with the meat if opting for the vegetarian version of this dish)
- 6 green onions, the roots and half the greens removed, thinly sliced
- 4 ounces (about 1 1/2 cups) grated cheddar, emmental, or other cheese
- (Optional) 1 tablespoon chopped bell peppers
You will want to oil or grease up a large 6 muffin cup or you could use two smaller muffin cup trays, which ever you use will determine the size of your strata.
The next step is to mix the eggs, milk, mustard, paprika, and half and half, along with the cayenne, and nutmeg, and salt. You will later use this so please place this to the side.
Then you will want to fill each cup with the bread, meat, and other ingredients evenly among your muffin cups. After you have filled each muffin cup you will then use the egg mixture you made before and fill each cup to as high as possible. The trick here is to evenly distribute all of the ingredients among your cookware as you will want everything to cook evenly.
Then after you have completed filling up these muffin cups you can then move them to the fridge to cool and set for at least 30 minutes. You could go so far as to prepare this the night before and cook in the morning if you so wish.
Finally you will need to preheat the oven to 350F and then bake these off for 15 to 20 minutes or until the egg has cooked all the way through. You really don’t want the eggs to be runny or under cooked as that is dangerous.
Lastly you can let these muffins sit for 5 to 8 minutes before you serve them out. How many you serve or make will be dependent upon how many people you are serving.
Mini breakfast statas are great either hot or cold so you can preserve the remaining cold muffins until the next day and then eat them.
